Unpolished vs Polished Dal: What's the Real Difference?
Conventional dal is polished to improve shelf appearance and speed up cooking. In the process, the outer bran layer — which carries a significant portion of the fibre, minerals, and protein — is stripped away. Unpolished dal keeps the bran intact, making it slower to cook but considerably more nutritious. Think of it as the brown rice equivalent for lentils.
How to Cook Unpolished Masoor Dal
Step 1: Rinse and Soak
Rinse the dal 2–3 times until the water runs clear. Soak for 20–30 minutes. This is a step you can skip with polished dal, but it makes a noticeable difference with unpolished — cutting cook time and improving digestibility.
Step 2: Cook the Dal
In a pressure cooker, combine 1 cup soaked dal with 2.5 cups water, ¼ tsp of farm-fresh haldi (turmeric), salt, and a pinch of asafoetida (hing). Cook for 3–4 whistles. In a pot, simmer for 25–30 minutes until completely soft.
Step 3: The Tadka
Heat 1 tbsp ghee in a small pan. Add 1 tsp cumin seeds. Let them splutter, then add 1 finely chopped onion and cook until golden. Add 1 tsp garlic paste, 1 chopped tomato, and red chilli powder to taste. Cook 2–3 minutes, then pour over the cooked dal. Stir and serve.
Step 4: Finish
Top with a squeeze of lemon, a drizzle of raw honey (optional, balances the acidity beautifully), and fresh coriander. Serve with rice or roti.
Tips for Best Results
- Don't rush the soak step — 20 minutes makes a real difference.
- Use good ghee or coconut oil for the tadka; it carries the spice flavours better than refined oil.
- Unpolished dal holds its shape better than polished — don't expect it to turn completely mushy; a slightly textured consistency is normal and desirable.
